Verde Shrimp & Rice Bowls

Total Cook Time: 30 minutes

  • - 1 package yellow rice

    - 2 servings of shrimps (6 ounces)

    - 1 bunch of asparagus

    - Your favorite store bought queso (we love ponchos)

    - 1 fresh jalapeño

    - 1 cup salsa verde

  • - In a pan over medium heat and 2 tablespoons of butter or oil sauté chopped asparagus and diced jalapeños for 5 minutes.

    - In the same pan, add in rice and cook based on package instructions (typically 1 cup of rice to 2 cups of water) but for this recipe use 1 cup of rice, 1 cup of water and 1 cup of salsa verde!

    - Once the rice is 95% cooked (liquid is soaked up) add in shrimp and cook for 2-3 minutes

    - Serve topped with queso, Enjoy!

  • A weeknight evening when you need a quick delicious meal; reheats well for lunch the next day…
