Cauliflower “Risotto”
Cook time: 10 minutes

- 1 bag of frozen cauliflower rice
- 1/3 a cup of heavy cream
- 1/2-3/4 a block of Boursin cheese (garlic and herb)
- 4-6 cloves of garlic (minced)
- 2 tablespoons of butter
- 2 tablespoons of olive oil
Optional
- parmesan cheese

- Microwave frozen cauliflower rice per bag instructions then set aside.
- In a saucepan over medium heat add in butter and olive oil and mix until melted, then add in the minced garlic.
- Drain any excess water from the cauliflower then add to the saucepan. Mix and let cook for 5 minutes, then add in the heavy cream and Boursin. Season with salt, pepper and parmesan to taste!

Protein and veggies of your choosing! Reheats well the next day in the microwave… such an easy and quick LOW CARB side dish.
