Cauliflower “Risotto”

Cook time: 10 minutes

  • - 1 bag of frozen cauliflower rice

    - 1/3 a cup of heavy cream

    - 1/2-3/4 a block of Boursin cheese (garlic and herb)

    - 4-6 cloves of garlic (minced)

    - 2 tablespoons of butter

    - 2 tablespoons of olive oil

    Optional

    - parmesan cheese

  • - Microwave frozen cauliflower rice per bag instructions then set aside.

    - In a saucepan over medium heat add in butter and olive oil and mix until melted, then add in the minced garlic.

    - Drain any excess water from the cauliflower then add to the saucepan. Mix and let cook for 5 minutes, then add in the heavy cream and Boursin. Season with salt, pepper and parmesan to taste!

  • Protein and veggies of your choosing! Reheats well the next day in the microwave… such an easy and quick LOW CARB side dish.
