Crawfish Rigatoni

Total Cook Time: 20 minutes

  • - Rigatoni

    - 2 large Jalapeño

    - Your favorite jar Alfredo sauce

    - 1 large white onion

    - 1 cup of chopped spinach (can be frozen)

    - Frozen crawfish tails (can sub for shrimp)

    - 3/4 cup Parmesan cheese

    - Juice of 1/2 a lemon

    - 1/2 teaspoon of each: Cayenne pepper, garlic powder, onion powder, pepper, and paprika

  • - Start by salting water in a large pot and bring to a boil for the pasta. Cook based on box instructions.

    - Dice your jalapeño (remove seeds if you don’t like too much spice) and your white onion

    - In a large pan over medium high heat sauté jalapeño and onions in 2 tablespoons of olive oil. After about 5 minutes add in your jar of sauce, seasonings and lemon juice.

    - Lower heat to medium and add in spinach, crawfish and cooked pasta.

    - Top with Parmesan… Enjoy!
