Egg Roll in a Bowl

Total Cook Time: 20 minutes

  • -1 large white onion chopped

    -2 tablespoons of minced garlic

    -1 lb of ground turkey

    -3 green onions chopped (white and green parts)

    -1 tablespoon of sesame oil

    -1/4 cup of soy sauce

    -1/8 cup of Japanese BBQ sauce (can sub for eel sauce)

    -half a bag of shredded coleslaw

    -1 cup of shredded carrots

    -1 tablespoon of red pepper flakes

    -teaspoon of garlic powder, onion powder and pepper

    Optional:

    -sesame seeds

    -french fried onions

  • - Begin by cooking rice per package instructions. I cooked 1 serving of rice for 2 people.

    - In a large pan over medium heat sauté diced onion until translucent then add in garlic and ground turkey. Brown the turkey meat.

    - Once the turkey is fully cooked (no pink pieces) add in the coleslaw, carrots and green onions. Once the rice is fully cooked mix it in too.

    - Next add in the liquids: sesame oil, soy sauce and Japanese BBQ. Then add your seasonings.

    - Top with sesame seeds, french fried onions and green onions. Enjoy!

  • A week night when you are tired and need a healthy meal quickly; could pair with some edamame!
