Japanese Skirt Steak Bowls

Skirt steak
Cubed Zucchini
Thinly sliced Yellow Onion
White Rice
Frozen cauliflower rice
Green onions
Cilantro
Juice of one lime
Sesame seeds
Steak marinade:
1/4 siracha
1/4 cup Japanese bbq sauce
1/2 cup soy sauce
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon red pepper flakes

Begin by slicing skirt steak very thinly against the grain into strips (this cuts through muscles making it easier to chew, sorry gross I know) then add to a freezer zip lock bag along with the marinade ingredients and toss in the fridge for as long as you can. (At least 30 minutes)
Once you are ready to start cooking begin by washing your rice. Cut the rice serving size in half as we are using equal parts regular rice and cauliflower rice for this recipe. Cook rice according to the package instructions.
In a large skillet over medium high heat sauté zucchini and onions in about 3 tablespoons of oil (I use avocado oil). Once cooked (zucchini is brown on the edges and onions are soft) add a splash (1/8 cup) of soy sauce to the veggies and season with garlic powder, onion powder, pepper and red pepper flakes. About 1 teaspoon of each seasoning. Then remove these from the pan and set aside for now.
In the same pan add in a bit more oil and turn the heat up to high. Pour the steak with the marinade into the pan. Begin to mix the steak until cooked to your desired temperature. It is cut thin so it will cook quickly. Add in 2 tablespoons or corn starch to the pan to thicken the marinade sauce. Mix until combined with the steak then add in your cooked veggies and lower heat to a low simmer while you fix the rice.
Once your rice is cooked, microwave the cauliflower rice according to package instructions. Mix both rices together and add in minced cilantro and the juice of one lime.
In a bowl add your rice mixture on the bottom then top with steak and veggie mixture. Add diced green onions and sesame seeds for garnish. Enjoy!
